Kielbasa Cabbage Pasta

A taste from my childhood, Kielbasa Cabbage Pasta. When I was a kid, we ate this on occasion. My father hates it and my mom is always jealous when I tell her, “It’s what’s for dinner.”

There is nothing fancy about this meal, I use boxed pasta and I don’t use fresh grated Parmesan cheese. I top the pasta with what we lovingly call “green cheese.” It’s the Kraft Parmesan cheese that comes in the green canister. This is a dish that reminds me of my childhood.

I turned Michael on to it when we got married, we love it. This is the perfect dish to use up any leftover cabbage and other  veggies you have in the fridge. If you plan ahead and cut up your veggies and kielbasa a couple days in advance, you can make dinner in less than 12 minutes.

KIELBASA CABBAGE PASTA:

1 box of spaghetti noodles, prepared per package directions

1/2 cabbage, shredded

1 package of kielbasa, sliced

1 large head of broccoli

1 small head of cauliflower

4 carrots, peeled and julienned

1/2 cup of low sodium soy sauce

1 teaspoon of sesame oil

2 tablespoons of rice wine vinegar

3 tablespoons of honey

Pinch of red pepper flakes

Vegetable or canola oil

Parmesan Cheese aka Green Cheese

Prepare your noodles per the package instructions. Meanwhile, prepare your veggies and kielbasa.

In a small bowl, whisk together the soy sauce, sesame oil, rice wine vinegar, honey, red pepper flake and set aside.

Heat your frying pan or wok to high heat. Add a touch of canola or vegetable oil. Cook the kielbasa until browned. Then remove from the pan and set aside.

Dump in the carrots, cauliflower and broccoli. Stir fry the veggies for 2 minutes.

Add 1/4 cup of water to the pan and cover. Let the veggies steam for 1-2 minutes.

Uncover and add the cabbage. Stir fry for 2 minutes.

Bring the kielbasa back to the pan and add the sauce.

Toss the meat and veggies around for another minute or two. Add the cooked and drained noodles to the pan. Give the noodles and veggies time to get to know each other and serve.

Sprinkle the “green cheese” all over the meal and dig in. (Notice in the picture I pulled a block of Parmesan. Behind the camera, I doused my pasta in the “green cheese.” SHHHH…..)
